As a little inspiration for your moments of enjoyment, this year’s calendar once again includes a Christmas family recipe from Grandma – perfectly matched to the variety of flavours in our calendar.

Grandma’s festive roast wild boar with red wine and mirabelle plum sauce
Ingredients (serves 4)
Roast & sauce:
1–1.2 kg wild boar roast
Lanius-Knab bourbon vanilla pepper,
½ tsp Lanius-Knab Pinot Noir red wine salt
2 onions,
1 carrot,
1 piece of celery
1 tbsp tomato purée
150 ml Winkel Pinot Noir red wine
1 – 2 tbsp Lanius-Knab red wine vinegar
200 ml stock (later approx. 400 ml in total)
2 tbsp Lanius-Knab mirabelle plum jam
1 tsp cornflour
Butter or oil for frying
Side dishes (optional):
Red cabbage with apples, potato dumplings
Preparation:
1. Brown the roast: Season the meat with salt, pepper and red wine salt, then brown thoroughly on all sides.
2. Roast the vegetables: Add the onions, carrots, celery and tomato purée and roast briefly.
3. Deglaze: Deglaze with red wine, pour in the stock. Cover and braise at 160 °C for approx. 2½ hours.
4. Make the sauce: Strain the gravy. Sweat the onions in a pan until translucent, deglaze with red wine, stir in the vinegar and jam, add a little stock and simmer for 5-8 minutes.
5. Season and thicken: Season with red wine salt and pepper, stir in the starch and thicken slightly.
6. Serve: Slice the meat and serve with the red wine and mirabelle plum sauce, red cabbage and potato dumplings.
